My First FRIENDSGIVING!

We hosted our first Friendsgiving with some of our best friends Julie and Katie and their families and it was a huge success.  We opted for prime rib and a bunch of decadent sides like broccoli casserole, creamed spinach, carrots, mashed potatoes, and even some meatballs with sauce. It was DELICIOUS. Here's a quick recap of the night. We started off opening utensils box from our WEDDING.  I dont think we have ever used these waterford utensils, but figured why not - right? What are we saving them for... Here we go! This is what it looked like when I took it out of the packaging this AM.  Salt first, and let it sit in the fridge, and then add more seasoning just prior to cooking. I salted the prime rib early, early this morning and then made a "marinade" around noon today.  I blended a white onion, fresh rosemary and a few pieces of garlic with EVOO in the nutribullet.  Then I spread it on the meat, bone side down. Apple Picking and LIFE

I LOVE MY COUSINS! We went to Honey Pot in Stowe this past weekend with Jim's sister, Mark, and the boys. It was such a great spot. They had apple picking, hay rides, hard cider, petting zoo and so much more. And the best part was that it was like 2 minutes from Auntie T's house! After apple picking, we went on a fun little hike through the neighborhood and wooded areas - it was so fun. The kids loved it. I made an apple pie at Theresa's house - yet when I got home, it fell out of my car and smashed on my driveway. My plate plate broke and the pie was ruined.  The next day, my mom made me a new pie with a smiley face. Nicest thing ever. Then we went to the eye doctor - Spiderman, Batman and Mom....we got a great report. Chrissy, Lindsey, and Charlie came to visit!  Linds and I walked to the boys elementary school to scoop them up, and we all ran home. Great workout, great fun. So many Hancock cousins came by to
