One Pan/Sheet Dishes - Good Week Night Options!

I was on Pinterest the other day and stopped at a salmon dish that looked unbelievable. It was a long sockeye salmon, baked with bright crisp asparagus and fingerling potatoes alongside it. It looked divine (can you tell I'm hungry??). In my head I thought wow that is stunning. And then another part of me thought how simple that was - placing it all on one baking sheet and walking away. The best part? It was all laid out on a piece of parchment paper making cleanup a piece of cake. Ok - now I want cake.

But all that had me thinking about "one pot meals" or "one sheet dishes" - not crockpot or anything that sits and cooks all day - I will save that for another post (if you have any crockpot soups or dishes, let me know and I'll add it to the list!). So here we go:  lets start with that dish as #1...

1. Sockeye salmon, asparagus, fingerling potatoes.
Take a baking sheet and drape it with a long piece of parchment paper. Open up your salmon, salt/pepper either side and set aside. Do the same with your green veggie of choice (guess we should stick with asparagus) and potatoes. Place it all on your parchment paper, laid out nicely. Drizzle it with EVOO and some fresh lemon circle slices - on top of the salmon. Bake at 350 for about 30 minutes depending on the size of the salmon. If you want, you can leave your veggies in there to stay warm and soften up. But don't overcook the fish. You can toss with pasta or eat as is. Garnish with lemon for a nice finish. In the summer, you can do the same as mentioned above and wrap in aluminum foil and place on the grill!


2. Chicken breasts with lemon, shallots, and capers.
Take a baking sheet and drape it with a long piece of parchment paper. You could also opt to use a cast iron dish to roast everything. Open up your chicken, rinse it off, and add salt/pepper to either side and set aside. Wash your lemons and slice them up, do the same with the shallots. Throw it all on the parchment paper and bake at 350 for about 30 minutes depending on the size of your chicken. Obviously the larger the chicken, the longer you need to cook it for - flip it at minute 15-20 and let it cook for the rest of the time. You can either eat it solo, or you can toss with pasta/zoodles for a chicken piccata.

3. Shrimp with garlic and roasted tomatoes.
This is an easy appetizer or dinner option.  Take a baking sheet and drape it with a long piece of parchment paper. Open up your raw shrimp, rinse it off, and add salt/pepper to either side. If it's frozen, put it in a bowl with COLD water for several minutes til it thaws. If it's fresh then opt to take off the tails (or not), place the shrimp flat on the parchment paper, and drizzle with EVOO and minced garlic and lemon. Then add diced plum tomatoes and do the same - salt/pepper too if you wish. Bake for 10 minutes max, flipping at minute 5 if significantly pink. For a little fun, add some crushed red pepper and squeeze a few more lemons on top right prior to serving. You can serve it on top of a bed of spring mix.

4. Steak tips with broccoli, sweet potato.
This is a one dish option, with a second step involved - so a little different but same idea and same clean up. Take a baking sheet and drape it with a long piece of parchment paper. Open up your steak, rinse it off, and add salt/pepper to either side and set aside. Let it sit until room temperature. Place the steak tips, broccoli, and peeled/diced sweet potato onto the parchment paper. Bake at 350 for 30 minutes. If vegetables have softened, go ahead and take them out - if not, let them stay in a little longer, depending on preference. Then take the veggies out and plate them. Turn your oven on broil (high) and let the meat brown significantly for flavor.


5. Sausages, bell peppers, onions.
This is a great Sunday night dinner option. Take a baking sheet and drape it with a long piece of parchment paper. Open up your sausages - any kind (my favorite options are hot sausages, garlic sausages, chinese sausages, and spinach/chicken sausages). Rinse them off, pierce them multiple times with a fork and set aside. Rinse veggies. Slice up bell peppers and white onion, add salt/pepper and place them on the parchment paper. Drizzle with EVOO. Bake at 350 for 30 minutes, flip sausages and bake for another 10-15 minutes. You can eat these as is, you can toss with any type of pasta (including spaghetti squash), you can add to a sub roll and eat as a sandwich, or you can even slice them and add to a make your own pizza! Tons of options with this dish to switch up your Sunday night routine.


6. Pork loin, baby carrots, with rosemary.
Take a baking sheet and drape it with a long piece of parchment paper. Open up your pork loin, rinse it off, and add salt/pepper to either side and set aside. Drizzle the pork loin, carrots, onions and whatever other veggies you have with with balsamic and EVOO. Add garlic salt and ground black pepper to the pork for more flavor.
